I have teamed with Steve Baker since 2001 after working for many of the fine restaurants in the Sacramento and Elk Grove Areas like Piatti Restorante and the Elk Grove Brewery.” Marcel was also the lead Chef at Sears Point Raceway and Sloughhouse Inn back in their heyday.
Chef Marcel is a classically trained French Brigade System ‘chef de cuisine’ which is an organizational system for professional kitchens instituted by Georges Auguste Escoffier toward the end of the 19th century that is still taught today at the famed Le Cordon Bleu Paris and the Culinary Institute of America Greystone and in effect in many fine dining professional kitchens worldwide.
